Tikka masala tofu

If I open a restaurant this will be at the start of the menu. Tikka masala tofu sandwiches folks! It’s bursting with flavour no matter how you slice it.
A combination of tikka masala paste, tofu, hummus, spinach, red peppers, tomatoes and sour dough bread.
The result is an unforgettable dish that leaves your taste buds enthralled.

Step 1: Start off by chopping your onions, tomatoes and red peppers ( I used 3 spring onions and 8 cherry tomatoes) Once chopped set aside
Step 2: Pour 2 tablespoons of olive oil onto medium-high heat frying pan, then put your tofu in to fry. Next, Mix around for 2-3 minutes and throw in mixed herbs, paprika, garam masala (2 table spoons each) Once Mixed in close the lid and leave to cook for 5 minutes.
- note* If you are using whole, unmarinated tofu this frying process will take longer.
Step 3: Set tofu aside and wash out pan
Step 4: Pour out 2 tablespoons of oil and cook your onions from earlier on medium-high heat, throw in spinach and mix well. Next add in some more mixed herbs and all-purpose seasoning (2 tablespoons each)
Step 5: Now add in your tomatoes, red peppers and more spinach. Let them simmer and steam for a 5 minutes as they release all their sweet juices.
Step 6: Next, throw in 2 ½- 3 tablespoons of tikka masala paste, I also add in some ketchup and water to reduce the kick, and balance out the spice.
Step 7: Mix in well then add a dash of garam masala, mixed herbs, more spinach and finally your tofu.
Step 8: Mix in well and close lid to steam for 5 minutes.
Step 9: That’s it for the tofu, for the sandwich, slice your sourdough bread and toast it lightly
Step 10: Spread some hummus over your toasted sourdough bread then lay down your tikka masala tofu.
Step 11: Enjoy ; )

Tikka Masala paste
6-8 cherry tomatoes
3 green onions or 1 white/red onion
Spinach (handful)

Delicious and quick. I made this for lunch and managed to make 3-4 sandwiches. Didn’t use the hummus but the sandwiches were still full of flavours.
