Aromatic Sweet Chilli Butter Bean & Tofu

Ingredients

  • 1 onion (minced finely)
  • 3 cloves of garlic (minced finely)
  • 4 medium sized carrots
  • 5-6 tenderstem broccoli
  • 2 bell peppers
  • 2 packets of marinated tofu
  • 1 can of butter beans
  • Sweet Thai Chilli Sauce
  • Tamarind sauce (optional – adds more sweetness)

Seasonings

  • Mixed herbs
  • Paprika
  • Garam masala
  • Ground cardamom (optional)

Step 1) Let’s begin prep by finely mincing 1 onion and 3 garlic cloves.

Step 2) Then slice 4 carrots thinly, followed by 2 bell peppers. Once you’ve done that, place your tenderstem broccoli alongside them ready to be fried.

Step 3) Last up on the prep list is the tofu and butter beans. Grab a bowl and throw your tofu and butter beans in. Then season with:

  • Mixed herbs
  • All purpose seasoning
  • Sweet chilli sauce
  • Tamarind sauce

Step 4) Drizzle some cooking oil into a frying pan and once hot begin sautéing your onions and garlic on medium heat.

Step 5) Stir occasionally as it cooks for 2-3 minutes, then add in some mixed herbs, paprika and garam masala.

  • Deglaze with water or broth if needed.

Step 6) Once fragrant and brown add in your sweet chilli sauce and mix in well.

Step 7) Now that the flavours are locked in throw in your carrots and broccoli.

  • Mix in for a good 2 minutes then put a lid on for 10 minutes, checking and stirring frequently.

Step 8) when your 10 minutes are up throw in the rest of the ingredients, Namely:

  • The chopped bell peppers
  • The tofu
  • The butter beans

Step 9) Mix in well then turn the fire low and allow to cook for a further 15 minutes.

  • 5 minutes in give the pan a mix and layer in some sesame seeds.
  • 10 minutes in garnish with more sesame seeds and parsley

Notes

  • Be sure to deglaze the pan with water or veg broth if needed
